Ingredients

    g
    Wild Rice
    cooked as per instructions, then drained and cooled.
  • 2
    whole
    Spring Onion(s)
    finely sliced.
  • 1
    whole
    Green Capsicum
    diced.
  • 1
    whole
    Red Capsicum
    diced.
  • 1
    cup(s)
    Pine Nuts
    lightly toasted.
  • 1
    cup(s)
    Currants
    soaked in white wine for 30 minutes, then drained.

    Coriander
    leaves.
  • 4
    tbsp
    Extra Virgin Olive Oil
  • 3
    tbsp
    Walnut Oil
  • 4
    tbsp
    White Wine Vinegar
  • 1
    dash
    Sea Salt
    add to taste.
  • 1
    dash
    Freshly Ground Pepper
    add to taste.

Directions

  • 1 Combine the oils, vinegar, salt and pepper and reserve.
  • 2 Mix all other ingredients and stir through the dressing.
