    Fine Bulgur
    soaked in ½ cup boiling water for ten minutes and drained

    Flat Leaf Parsley
    thick stems discarded, the rest very finely chopped
  • 1/2

    Mint Leaves
    very finely chopped
  • 1

    Tomato
    seeds removed, cut into ½ cm dice
  • 1/2

    Cucumber
    peeled and seeds discarded, cut into ½ cm dice

Directions

  • 1 Combine all ingredients in a bowl and season well with salt and freshly ground black pepper.
