    Garlic
    peeled and sliced
  • 2
    small
    Red Chillies
    seeded and sliced
  • 2
    tbsp
    Sugar
  • 2
    tbsp
    Lime Juice
  • 3
    tbsp
    Rice Vinegar
  • 3
    tbsp
    Fish Sauce
  • 2
    tbsp
    Water

Directions

  • 1 Make a paste from the garlic and chillies in a mortar and pestle then add all other ingredients and mix until the sugar dissolves.
  • 2 NB: It is important to taste this before serving and balance the sauce because of the variation in strength of chillies. If it is too hot, add more sugar and lime juice or dilute it with a little more water.
