Herb And Capsicum Bulghur

    Red Capsicum
    cut into 2-3cm strips

    Yellow Capsicum
    cut into 2-3cm strips

    Mint
    chopped

    Coriander
    chopped
  • 2
    tbsp
    Flat Leaf Parsley
    chopped

    Tomatoes
    2 semi or sun dried - very finely chopped

    Extra Virgin Olive Oil

    Lemon Juice

    Pine Nuts
    toasted

Directions

  • 2 Brush the capsicum with a little oil and char grill slowly until tender. Cut crossways into thin slices.
  • 3 Mix all ingredients in a bowl and season well with sea salt and black pepper.
