Easy Lamb Curry

Of course you can cook this in the kitchen, but it can also simmer away on your wok burner if you feel like cooking and eating al fresco.

    leg
    Lamb
    excess fat removed, cut into large (4cm) chunks
  • 2
    tbsp
    Neutral Oil
  • 2
    large
    Onion(s)
    sliced
  • 4
    clove(s)
    Garlic
    sliced
  • 1
    tbsp
    Ginger
    grated
  • 1
    tbsp
    Cumin
  • 1
    tbsp
    Ground Coriander
  • 1
    tsp
    Tumeric
  • 2
    tsp
    Garam Masala
  • 1
    Chilli
    ground (optional)
  • 1
    tbsp
    Salt
  • 1/2
    cup(s)
    Coriander Leaves
    chopped
  • 2
    tbsp
    Lime Juice

Directions

  • 1 Heat the oil in a heavy bottomed pot and soften the onions, garlic and ginger without browning them.
  • 2 Add the cumin, coriander, turmeric, garam masala, salt and chilli if using and 4 cups of water.
  • 3 Add the meat to the pot and bring to the boil, then simmer very gently for 2-3 hours.
  • 4 Just before serving add the coriander and lime juice and gently stir through.
  • 5 Serve with boiled rice, maybe with some saffron in the water.
