Cuban Palomilla Steaks With Onions

    thin
    Sirloin Steaks
    2/3 cm - can use top round steak
  • 4
    clove(s)
    Garlic
  • 1
    cup(s)
    Lime Juice
  • 5
    tbsp
    Olive Oil
    preferably spanish
  • 1
    tsp
    Ground Cumin
  • 1
    tsp
    Sea Salt
  • 1
    tsp
    Black Pepper
    freshly ground
  • 2
    medium
    Brown Onion
    to large, sliced
  • 1
    cup(s)
    Fresh Flat-leaf Parsley
    chopped

Directions

  • 1 Puree the garlic, lime juice, cumin, salt and pepper and three tablespoons of olive oil in a food processor or grind in a mortar and pestle.
  • 2 Marinate the steaks in 2/3 of the garlic and lime mixture covered in the fridge for one hour. Using the remaining two tablespoons of oil, cook the onions over medium heat on the flat grill with the remaining third of the marinade until golden brown.
  • 3 While the onions are cooking, wipe excess marinade from steaks and cook over high heat on the char grill.
  • 4 Fold the parsley through the onions and serve a big spoonful of onions with a couple of the thin steaks arranged on top.
