Classic Rice Salad

Ingredients

    Long Grain Rice
    placed in lots of boiling salted water until just cooked, then rinsed under cold water in a colander or sieve.
  • 1
    whole
    Red Capsicum
    finely diced.
  • 1
    whole
    Green Capsicum
    finely diced.
  • 3
    whole
    Spring Onion(s)
    white and pale green parts only, finely sliced.
  • 2
    slice(s)
    Leg Ham
    finely sliced.
  • 1
    cup(s)
    Prawns
    small cooked prawns or chopped prawns - optional.
  • 4
    whole
    Button Mushrooms
    chopped.
  • 1
    cup(s)
    Long Grain Rice
    lightly toasted.
  • 1
    cup(s)
    Flat Leaf Parsley
    chopped.
  • 1
    cup(s)
    Coriander
    chopped.

    Peanut Oil
  • 3
    tbsp
    White Wine Vinegar
  • 1
    tsp
    Freshly Ground Pepper
    add to taste.

Directions

  • 1 Mix oil, vinegar, salt and pepper and reserve.
  • 2 Combine all other ingredients in a large bowl and stir through the dressing.
