Chinese Pork Ribs

- 2kgAmerican Style Pork Ribssawn in half if not already done, excess fat removed, cut into four rib sections.
- 1clove(s)Garlic
- 1litre(s)Water
- 1thumb(s)Ginger
- 1piece(s)Orange Peelwhite pith removed; or a piece of dried orange or tangerine peel.
- 200mlMirinshaosing rice wine may also be used.
- 100mlSoy Sauce
- 100gPalm Sugar
- 0cup(s)Barbecue Sauceoptional for sauce.
- 1cup(s)Sweet Plum Marinadeoptional for sauce.
- 1tspOrange Peelgrated. optional for sauce.
- 4wholeStar Anaise
- 2wholeCinnamon Sticks
Directions
- 1 Place all the ingredients in a large pot and bring to the boil then simmer very gently for half an hour.
- 2 Remove the ribs and allow to rest for twenty minutes while you increase the heat under the stock to reduce it.
- 3 To make the sauce, simply place the plum and barbecue sauces in a small saucepan with the orange peel and bring to the boil. Simmer for one minute.
- 4 Brush the ribs with a little neutral oil and cook on the char grill, basting with the reduced stock. Cook until just slightly charred and crispy.
- 5 Pour sauce over as you serve the ribs.
