Caramelised Mangoes With Coconut Ice Cream

Ingredients

    whole
    Mango
  • 4
    tbsp
    Caster Sugar
  • 1
    cup(s)
    Coconut Cream
  • 1
    cup(s)
    Palm Sugar

Directions

  • 1 Melt the palm sugar in the coconut cream in a small saucepan over low heat. Refrigerate until cold.
  • 2 Sprinkle the sugar over the cut halves of mango.
  • 3 Place sugar/flesh side down on a very clean, very hot flat bbq grill or under the griller of your stove. Cook only to caramelise the sugar- the fruit only needs to warm through.
  • 4 Serve two mango cheeks with a drizzle of the sweet, rich cream.
