Cajun Chicken Skewers And Salad.

    Chicken
    breast and/or thigh cut into 2cm cubes
  • 1
    tbsp
    Celery Salt
  • 1
    tbsp
    Ground Paprika
  • 1
    tbsp
    Dried Thyme Leaves
  • 1
    tbsp
    Ground Oregano
  • 1
    tbsp
    Dried Cumin
  • 1
    tsp
    Ground Cayenne
    more to taste
  • 1
    tbsp
    Neutral Oil
  • 1
    whole
    Green Capsicum
    cut into 1cm square pieces
  • 2
    stalk(s)
    Celery
    chopped
  • 1
    whole
    Red Onion
    small onion, peeled and finely sliced
  • 1
    whole
    Green Chilli
    very finely sliced
  • 2
    tbsp
    Coriander
    chopped
  • 2
    tbsp
    Extra Virgin Olive Oil
  • 2
    tbsp
    Lemon Juice
  • 3

    Tabasco Sauce
  • 1

    Black Pepper
  • 1

    Sea Salt

Directions

  • 1 Mix the chicken with all other ingredients and marinate for 2 - 12 hours.
  • 2 Thread chicken onto skewers and cook on a hot char or flat grill until opaque.
  • 3 Mix the olive oil, lime juice, Tabasco and salt and pepper in a salad bowl. Add capsicum, celery, onion and chilli and mix well to coat.
  • 4 Serve 2 skewers each with a generous spoonful of salad.
