Caramelised Mangoes with Coconut Ice cream

Ingredients
 
4WholeMango ‘Cheeks’ removed close to the stone. 
4TbspCaster Sugar  
1Cup(s)Coconut Cream  
1/2Cup(s)Palm sugar  


Directions

Sprinkle the sugar over the cut halves of mango.

Melt the palm sugar in the coconut cream in a small saucepan over low heat. Refrigerate until cold.

Place sugar/flesh side down on a very clean, very hot flat bbq grill or under the griller of your stove. Cook only to caramelise the sugar- the fruit only needs to warm through.

Serve two mango cheeks with a drizzle of the sweet, rich cream.
