Oysters with Gazpacho Dressing

Of course there is nothing wrong with oysters with lemon and a grate of black pepper as long as you have great, fresh oysters. You still need great, fresh oysters here, but the gazpacho dressing is both different and a really good sharp match the creamy, salty character of the oysters.

Ingredients
 
12WholeOysters Fresh 
1TbspSherry Vinegar  
1TbspSherry Vinegar  
1Drop(s)Tabasco sauce A few drops to taste. 
1DashBlack pepper Add to taste. 

Dressing
1TspRed Onion Very finely diced  
1TspRed Capsicum Very finely diced  
1TspCucumber Very finely diced (no skin, no seeds) 
1TspTomato Very finely diced (no skin, no seeds) 
1TbspOlive Oil  
1TbspSherry Vinegar  
  Tabasco sauce To taste 
  Freshly Ground Pepper To taste 


Directions

Place all ingredients in a screw top container and shake, then chill for 30 minutes.

Spoon a little of the dressing on to each oyster and serve.
