BBQ T-bone with marinated zucchinni & black olives

Paul McMahon from Catalina, the restaurant with the view of Sydney to kill for, certainly likes his chilli. Here’s a nice and easy T-bone recipe that quickly marinates the steaks and teams them with grilled zucchini and a salad packed with fresh herbs and of course, chilli.

Ingredients
 
4WholeT-Bone Steak  
1/2Bunch(es)Fresh Thyme  
1Pinch(es)Salt  
1Pinch(es)Black pepper  
4WholeZucchini Thinly sliced lengthways 
3WholeRed Chilli Long chillies cut into fine rings 
3Clove(s)Garlic Crushed 
100MlRed Wine Vinegar Cabernet sauvignon vinegar is best 
300MlExtra Virgin Olive Oil  
1TspFresh Oregano Picked & roughly chopped 
1TspFresh Thyme Picked & roughly chopped 
2TspFresh Parsley Picked & roughly chopped 
1WholeLemon(s) Zest & juice 
40GmBlack Ligurian Olvies Pitted & halved 


Directions

Season and rub the steaks with olive oil and thyme leave stand to room temperature.

Pre-heat char grill.

Cook steaks for 2 minutes each side or until cooked to your liking. Remove to a plate, cover loosely with foil and rest 5 minutes

Combine all ingredients except zucchini and let stand. Grill the zucchini on the char grill until just tender then add to marinade.

Serve steaks with marinated zucchinis.
