Ingredients
 
2Cup(s)Long grain rice Placed in lots of boiling salted water until just cooked, then rinsed under cold water in a colander or sieve. 
1WholeRed Capsicum Finely diced. 
1WholeGreen Capsicum Finely diced. 
3WholeSpring onion(s) White and pale green parts only, finely sliced. 
2Slice(s)Leg Ham Finely sliced. 
1/2Cup(s)Prawns Small cooked prawns or chopped prawns - optional. 
4WholeButton Mushrooms Chopped. 
1/2Cup(s)Long grain rice Lightly toasted. 
1/2Cup(s)Flat Leaf Parsley Chopped. 
1/2Cup(s)Coriander Chopped. 
6TbspPeanut Oil  
3TbspWhite wine vinegar  
1TspFreshly Ground Pepper Add to taste. 


Directions

Mix oil, vinegar, salt and pepper and reserve.

Combine all other ingredients in a large bowl and stir through the dressing.
